Cream Of Winter Squash Soup Cream Of Winter Squash Soup
Serves 4 as a main dish.
Small pumpkin or medium squash (butternut, acorn) 1
Medium onion 1
Garlic 3 Cloves
Salute Santé!® Chili Grapeseed Oil 3 Tbsp.
Salute Santé!® Grapeseed Oil 3 Tbsp.
Veggie or Chicken stock 6 cups
Sugar 1/4 cup
Salt & Pepper to taste

1. Cut up squash or pumpkin into sections. 2. Place in a baking dish with onion and garlic slices. 3. Rub all with Salute Santé!® Chili Grapeseed Oil.
4. Sprinkle with salt, pepper and half the sugar. 5. Bake 1-1-1/2 hours until tender at 350? 6. Remove onion and garlic and place in a soup pot.
7. Saute in Salute Sante! Grapeseed Oil about 7 minutes. 8. Scoop pumpkin out of shell. 9. Add to soup pot with stock.
10. Add remaining sugar. 11. Bring to a boil and then simmer 20 minutes. 12. Let cool then puree until creamy and thick.
