Carpaccio de Daurade aux Asperges Vertes


Ingredients

(Serves 1 person)


  • Thin-sliced red snapper (salted and peppered)----- 50g (2 oz)
  • Green asparaguses (boiled in 2% salted water) ----- 2
  • Mixed green salad ----- A Pinch
  • Herbs (dill, cerfeuil, parsnip)-----A small amount
  • Sliced radish-----3 sheets
  • Minced ciboulette-----A small amount
  • Diced tomatoes-----Some
  • Leek-----A Pinch
  • Green oil-----Some
  • Japanese dressing-----Some

    Put 2 green asparaguses on a plate. Add thinly-sliced red snapper on to the asparaguses. The red snapper should be salted and peppered beforehand. Spread ciboulette over the plate. Put Japanese dressing on the ingredients. Decorate radishes and salad on the plate, then add herbs and dressing.

    For decoration, draw lines on the plate with the green oil. Bake for 20 minutes until bubbly at edges.    

    *Green Oil
    By using a blender, mix 3 grams of parsley, 10 grams of garlic, and 75cc of Salute Sante!R Grapeseed Oil.
    *Japanese Dressing
    Mix 60cc of Salute Santé!® Grapeseed Oil, 15cc of white wine vinegar, grated ginger and garlic, 3cc of soy sauce, and 1cc of lemon juice.
